Maintaining the quality and safety of perishable foods in restaurants requires continuous monitoring and reliable traceability. This paper presents an Internet of Things (IoT) and blockchain–based monitoring system for pizza production, addressing food spoilage, operational inefficiencies, and regulatory compliance. Environmental sensors track temperature and humidity in real time; a Raspberry Pi processes sensor inputs, captures images via a Pi camera, classifies conditions as normal or critical, and issues automated alerts. Measurement records are secured on a blockchain through smart contracts to ensure immutability and prevent tampering. In controlled experiments, the system achieved ±0.5◦C temperature accuracy, 100% on-chain upload reliability, and alert delivery within 2–4 s. By maintaining storage temperatures in the recommended 2–6 ◦C range, the system helps reduce spoilage risk while providing an immutable audit trail for inspections. Operating costs are minimal, USD 3.91 per year for 12 daily blockchain transactions, making the solution low-cost, easily deployable, and extensible to other perishable food workflows.
